How to cook momos
Vegetable Momos Recipe
What you need for Momos For momos Wrapping
3-4 cups flour
1 cup Water
1 tbsp vegetable oil
Salt as per taste
For momos filling
1 big onion (finely chopped)
1 tsp crushed garlic
1 tsp crushed ginger
1/2 green onion finely chopped
1/2 cup cauliflower chopped
1/2 cup carrot chopped
1/4 cup spinach chopped
1/2 cup green peas
1/2 cup cilantro finely chopped
1/2 tsp turmeric
1 tsp black pepper powder
salt as per taste
How to cook vegetable momos
Take flour in a vessel and water and salt and mix well to make a stiff dough. Keep it for around 30 mins
and then start preparing the wrappers.
In a pan heat vegetable oil and fry the onions till light golden color, add garlic and fry till the color is golden.
Add turmeric powder, crushed garlic, crushed ginger, and chilies. Fry for around 30 sec. Add vegetables and stir-fry until slightly soft.
Add green onions and cilantro, mix well. Now add one tbsp flour-water mixture to solidify the mixture. Transfer the mixture into a bowl and put in a refrigerator for at least 1 hour to allow cooling.
Add turmeric, garlic, ginger, and chilies. Fry for 30 sec. Put vegetables and stir-fry until slightly soft. Do NOT over stir-fry the vegetables. Salt and pepper the vegetable mixture. Add cheese, green onions and cilantro, mix well. To solidify the vegetable mixture, add one tablespoon of flour-water mixture. Mix the mass over until thickened. Transfer the vegetable filling into a bowl. Cover and refrigerate for at least 1 hour to allow cooling.
Final preparation of Momos:
Take the dough and make small balls and roll these balls between your palms to give spherical shpae. Use dough board and
rolling pin to prepare the wrappers. Make sure that the middle portion of the wrapper be slightly thicker than the edges to so that it can hold during packing and steaming. Cover the wrappers with bowl to prevent them from drying.
Put one tbsp of the filling mixture in the wrapper and then bring all edges together to the center, making the pleats. Now properly twist the pleats to ensure the closure of the stuffed momo.
Now oil the steamer rack properly so that the momos do not stick to the steamer. Heat the steamer and arrange the momos
in the steamer, cover the lid and allow for cooking for 9-10 mins. Now the momos are ready to be served hot with momo chutney.
How to prepare Momos chatni
Take two larger ripe tomatoes and roast these in oven for 30 mins. Now remove the skin of the tomotao
and take the pulp in a bowl. Add 1 cup of sesame seds, 1 tbsp mustard seeds and 1 tsp cumin seeds in a frying pan. Heat
the mixture over medium flame, stir until the seeds are toasted. Take out the seeds and grind them using a blender.
Now take roasted tomato pulp in a bolw, add the powder prepared, add red chillies (4), 1 tbsp of crushed ginger, 1 tbsp
pepper, 1/4 tsp. of asafetida, 2 tbsp. of lime juice, 1 tbsp. of lime zest and salt as per taste. Mix the mixture
with water and stir it well.
